Eat Your Way…

Ingredients
7 oz of ground beef
7 oz of whole tomatoes (canned)
1/2 medium onion finely chopped
1/4 carrot finely chopped
1 glove of garlic crushed
1 bay leaf
1 tablespoon of flour
2 tablespoons of cooking oil
1 cup of red wine
2/3 cup of vegetable stock
Salt and black pepper to taste

Heat the vegetable oil in the frying pan over a moderate heat. Add the garlic, the carrots and the onions and saute them until tender. Add in the ground beef and brown it over high heat. Add one tablespoon of flour and stir well. Add the red wine and simmer until the alcohol cooks off. Finally add the tomatoes, the vegetable stock and the bay leaf and stir well. Reduce the heat and cover the pan, cook for about 10 minutes while stirring occasionally. Finally season with salt and pepper to taste.
You can serve the Bolognese sauce with pasta.

Ingredients
1 cup of sugar
1 cup of fresh cream
In a saucepan let the sugar melt on a medium heat. Once the sugar is lightly browm add in the fresh cream and stir well.

1/4 cup of olive oil
3 tbsp of vinegar-balsamic,wine, cider etc.
1
clove
of crushed garlic

1 teaspoon of basil and/or oregano

Salt and Pepper

1 cup of mayonnaise
2 tablespoons of wine or cider vinegar
1clove of crushed garlic
1 tsp. basil
Salt and black pepper

You can substitute yogurt for mayonnaise or mix 1/2 cup of mayo and 1/2 cup yogurt together for your dressing base.

Lemon juice can be used in place of vinegar.

Ingredients:
1 tablespoon of butter
2 tablespoons of flour
1 ½  cups of milk
black pepper
salt

In s saucepan, heat the butter on meadium heat untill melted. Add the flour and stir untill smooth. when the mixture becomes lightly brown, add the milk gradually whisking continually. the béchamel sauce is ready to use once it gets smooth, don’t forget to season with salt and black pepper.

Ingredients:
1 cup of chopped semi sweet chocolate or 1 ¼ cup of cocoa powder
1 cup of crème fraiche (fresh cream)
2 tablespoons of butter

Let the chocolate and the butter melt (using a bain marie , or in the microwave), then add the fresh cream and mix the ingredients.
If you’re using cocopowder, heat the fresh cream while adding gradually  the butter and the cocoa powder.

Ingredients:
1 cup of Mayonnaise
2 Tbsp of finely chopped pickles
2 tbsp of finely chopped parsley
1 tbsp of finely chopped onion
Stir all ingredients together; you can add some white pepper (optional)

Ingredients:
3 Tbsp olive oil
1 medium onion, finely chopped
3 cloves of garlic, minced
1 kg of fresh tomatoes, peeled, seeded, and chopped
1 Tbsp of tomato paste
2 Tbsp of chopped fresh basil
2 Tbsp of oregano
1 Teaspoon of sugar
Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, and the minced garlic. Stir to coat. Then add the fresh tomatoes, the tomato paste, 1 teaspoon of sugar and the oregano.  Cook the ingredients for 10 minutes. Reduce the heat then add the fresh chopped basil, stir the mixture then turn of the heat.
